Abstract

The rising demand for functional foods has driven innovation in developing nutrient-dense snacks for active individuals. This study investigates the formulation and nutritional profiling of sports bars fortified with Prosopis cineraria (Sangria), a desert plant valued for its nutritional and therapeutic properties. Standardized incorporation levels were established, and proximate analysis revealed improved protein, fiber, and bioactive content. Phytochemical screening confirmed the presence of flavonoids, tannins, and phenolics, while antioxidant assays highlighted enhanced functional potential. The fortified bars maintained acceptable sensory and physical attributes, demonstrating their suitability as health-promoting snacks and supporting the use of indigenous, underutilized plants in functional food development.
